Cardiopulmonary Nurses host Holiday Health
Challenge luncheon
A motivational tradition, Upland Hills Health Cardiopulmonary
Nurses hosted their annual Holiday Health Challenge on Monday
February 5th. Designed to keep their patients on track, this
annual event has become a socializing favorite. Participants
are challenged to consume optimal amounts of water, fruits
and vegetables. Rewards for most minutes of exercise and
weight loss are also given.

Over 50 patients, family members,
and friends braved the subzero weather to attend. The event
started with a spread of delicious, heart-healthy fare— smoked
turkey sandwiches, Greek tomato salad, roasted veggies with saffron & soy
sauce, angel food cake with amaretto dip, low-fat chocolate chip cheesecake,

on Monday February 5th. |
As Cardiopulmonary Co-Manager Marianne Crowley RN explained, “There
are so many delicious and healthy food selections available
to us today. We just need to train ourselves to make the
right choices.”
Feeding the soul as well as the body, attendees were treated
to a talk by Dr. Mark Bishop on the health benefits of spiritual
living. He presented facts on the negative impact of worry
and focused on the need for a relationship with the living
and loving God to achieve true peace and relief from stress.

Recipes
Amaretto Dip
1 Box of fat free,
sugar free instant vanilla pudding (small size)
1 cup of Fat Free Milk
3-4 Tbsp of Amaretto, to taste
1 Envelop of Dream Whip prepared according to directions
with ½ cup cold fat free milk- omit vanilla.
Wisk instant pudding mix and milk together.
Add Amarettol
Prepare Dream Whip.
Fold Dream Whip into pudding mixture. Chill in the
refrigerator for at least 2 hours.
Serve as a dip with fruit or angel food cake pieces. |
Low Fat Cheese Cake
1 ½ cup
chocolate graham cracker crumbs
3 Tbsp melted margarine
Mix and press in a large pie pan. Bake at 350 degrees for 10 minutes. Cool.
In a large bowl beat
3- 8oz. No Fat cream cheese
14 oz. can lowfat sweetened condensed milk.
3 egg whites
2 tsp vanilla.
Beat until smooth.
Stir in ¼ cup mini chocolate chips.
Pour into crust.
Pour ¼ cup chocolate chips on top.
Bake at 350 degrees for 30 minutes.
Run knife around the edge of the pan to separate.
Put in refrigerator to cool.
Once cool, cover tightly and keep refrigerated until
ready to serve. |
